"Fans of great skiing and eating have a new jewel in Vail: Sapphire Restaurant & Oyster Bar. Joel and Susan Fritz have created a restaurant of unmatched appointment and quality in the heart of Vail Village.
The menu features everything from sushi quality Tuna seared to perfection to parmesan encrusted Veal Chop, large and perfectly prepared. Tender Loin of Pork, Free Range Chicken Breast and Beef Tenderloin are also featured. I consider myself a pretty good judge of outstanding eats. Everything was great. The desserts are so artfully presented you almost do not want to eat them. But do so!
Sapphire is a spot of quiet, comfortable elegance (perfect after a day on the slopes) with a modern makeup and long bar with wine list to match. Chef Peter Millette literally works magic there. The motto is "good stuff on a plate with wine to match." Clearly an understatement!"
